Deviled eggs with bacon

Deviled eggs make a great protein and low calorie snack during the day, and are perfect for an appetizer or pot luck item. These deviled eggs are so delicious, they will go fast, so make sure to get your fill before they do, and be careful not to eat too many at one time.


  • 8 eggs
  • 4 strips bacon, cooked and chopped (reserve some for garnish if desired)
  • 2-4 tbsp vegannaise (or Mayonnaise)
  • 1 tbsp Dijon mustard
  • 2 tbsp scallions, chopped
  • 1/2 tsp dried basil
  • 1/2 tsp dried parsley
  • Dash of garlic powder
  • Dash of Celery salt
  • Dash of pepper
  • 1 tsp lemon juice
  • Cherry tomatoes, sliced, for garnish (optional)


  1. In a medium pot, boil water.
  2. Once boiling, carefully place eggs in water (use a large spoon), and let eggs cook in boiling water for 12 minutes.
  3. Remove, drain eggs, and rinse with cold water to cool.
  4. Once cool, remove shell, and cut eggs in half, lengthwise.
  5. Remove the egg yolks, place in a small bowl, and mash them together.
  6. Mix in the remaining ingredients (except tomatoes) and blend well.
  7. Spoon mixture into the egg white.
  8. Sprinkle with remaining bacon and scallions; top with tomato.
  9. Cool in the refrigerator for at least 30 minutes
  10. Serve and enjoy!

Veggie-packed burger with egg on top

If you need to get your serving of vegetables in for the day, this is a great way to do it. It's also a perfect way to disguise vegetables from the kids too! Either way, this burger makes a perfect weekend breakfast for two, or even a main dish. I prefer it without the bun, as shown here, but feel free to place between a bun with your choice of condiments.


  • 1 lb ground beef and/or ground sirloin
  • 1 carrots
  • 1 zucchini
  • 1/4 apple, cored
  • 1/4 of an onion
  • 2 stalks celery
  • 4 stems of broccoli
  • 2 cloves garlic
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1 tsp garam masala spice
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup crumbled feta or goat cheese
  • 2 eggs


  1. Preheat grill to 300 degrees F.
  2. Place meat in a large bowl, set aside.
  3. Using a blender or food processor, add the carrots, zucchini, apple onion, celery,
  4. broccoli and garlic. Pulse until diced very small.
  5. Add vegetables to meat, and combine well.....don't be afraid to get you hands in there
  6. and mix it up thoroughly.
  7. Grab a small handful of meat and form a thin patty; repeat.
  8. Add about 2 tablespoons of the cheese on one patty, and add the other patty on top of
  9. that. Squish edges of meat to close and form one large patty (stuffed with cheese).
  10. Repeat last 2 steps to form another burger.
  11. Season burgers with a little extra salt.
  12. Grease the grill and cook the burgers for about 4-5 minutes per side.
  13. Remove from grill and cover with foil.
  14. Meanwhile, heat a large fry pan (with a lid) over medium-high heat, add an egg.
  15. Add 1 tablespoon of water, and quickly cover to steam the egg.
  16. Cook egg for about 3 minutes, or until whites are cooked through.
  17. Transfer burger to a plate, top with the sunny-side up egg, and serve.
  18. Enjoy!

I love to have a protein packed bite. These meatballs are full of flavor, make a great go-to snack or healthy appetizer. Eat them alone, or add them to your favorite creamy pasta dish. These are great with a tzatziki or yogurt dip as well.


  • 2 lbs ground beef (I use grass fed) or ground chicken (organic)
  • 1/4 cup sun dried tomatoes, chopped
  • 1/4 cup black olives, chopped
  • 1/4 cup roasted red bell pepper, chopped
  • 2 tbsp scallions, chopped
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp onion powder


  1. Preheat oven to 400 degrees F.
  2. Line a cookie sheet with foil, and lightly grease foil.
  3. In a large bowl, combine all ingredients.
  4. Form small meatballs and place on foil-lined sheet. (When forming meatballs, do not pack the ball tightly, just loosely form the ball)
  5. Bake for 10-15 minutes, flip meatballs, and cook another 5-10 minutes.
  6. Remove from oven, and serve.
  7. Enjoy!

There are many ways to glaze carrots, but this is the best recipe you will find, I promise. Refreshing, fresh, slight sweetness with a little tang. Perfect side dish to any protein. Side note: cutting carrots on the diagonal helps to create uniform thickness and size which is better for uniform tenderness for each carrot, and it looks cool too! You can use baby carrots as well, but may take a little longer to cook.


  • 6 large carrots, cut diagonally
  • 1/2 cup vegetable broth
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1 tbsp butter
  • 2 tbsp white sugar
  • 1 tbsp lemon juice


  1. In a large fry pan, bring carrots, broth, honey and salt to a boil, cover, and boil until carrots are slightly tender (about 5 minutes).
  2. Remove cover, and continue to boil until liquid is almost all evaporated.
  3. Remove from heat, add butter and sugar, and toss to coat.
  4. Drizzle with lemon juice, and serve.
  5. Enjoy!
