Mediterranean Chicken

This chicken dish is so easy, so full of flavor, and honestly couldn't be healthier. When you boil chicken, it holds a bit more moisture....and the oils/marinades from the artichoke hearts and other ingredients make up the dressing for the dish, giving it just enough moisture and flavor.


  • 2-3 large boneless, skinless chicken breasts
  • 1/2 cup roasted red peppers, chopped
  • 1/2 cup marinated artichoke hearts, roughly chopped
  • 1/4 cup marinated sun-dried tomatoes, chopped
  • 1/2 cup kalamata olives (pitted, whole or sliced)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup reduced fat feta cheese, crumbled
  • Salt n' pepper
  • Note: to avoid cooking at all, you can also buy a roasted chicken from the market, and just pull off and shred that meat.


  1. Fill a large pot with water, enough to cover the chicken breasts. Boil the chicken until cooked through (approximately 15 minutes).
  2. Once done, remove from pot, let cool slightly, then shred the chicken with 2 forks, or with your hands. Transfer to a large bowl.
  3. Add peppers, artichoke hearts (with marinade), sun-dried tomatoes (with a little marinade), olives, onion and feta to chicken.
  4. Add salt and pepper to taste. Toss well to combine.
  5. Serve! Garnish with a little extra feta, if you choose.

Mediterranean meatballs

I love to have a protein packed bite. These meatballs are full of flavor, make a great go-to snack or healthy appetizer. Eat them alone, or add them to your favorite creamy pasta dish. These are great with a tzatziki or yogurt dip as well.


  • 2 lbs ground beef (I use grass fed) or ground chicken (organic)
  • 1/4 cup sun dried tomatoes, chopped
  • 1/4 cup black olives, chopped
  • 1/4 cup roasted red bell pepper, chopped
  • 2 tbsp scallions, chopped
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp onion powder


  1. Preheat oven to 400 degrees F.
  2. Line a cookie sheet with foil, and lightly grease foil.
  3. In a large bowl, combine all ingredients.
  4. Form small meatballs and place on foil-lined sheet. (When forming meatballs, do not pack the ball tightly, just loosely form the ball)
  5. Bake for 10-15 minutes, flip meatballs, and cook another 5-10 minutes.
  6. Remove from oven, and serve.
  7. Enjoy!
